Scéal - the Irish for story. Welcome to Scéal Bakery’s food newsletter where we’ll be sharing stories, recipes, insights into running a bakery and meandering thoughts. Aon Scéal? Well I’m sure we have a few.

Who are we

Founded in 2017 by Charlotte Leonard-Kane and Shane Palmer. Scéal is a collective culmination of 24 years working as chefs turned bakers, collecting ideas, gathering experience, sharing meals and the true desire to feed people food made with love, exceptional ingredients and passion.

Some would say our story starts back in 2010 on our first day of our Culinary Arts degree. We were placed next to one another alphabetically in our opening kitchen class and from that moment our paths were intertwined. A former lecturer got us both jobs in the same restaurant, I would sneak Shane desserts during service and friendship turned to love.

Scéal has taken us from a small micro-bakery on an urban farm in Glasnevin, to a commercial kitchen in Dublins north side, through farmers markets, flea markets, pop ups and a hatch, we’ve been through commercial accounts and online (thanks covid). Along the way we’ve become one of Dublin and Irelands leading bakeries. We’re about to embark on a new project and we want to share the journey with you.
